I have been in the process of writing a new webnovel, and have yet to finalize on all the ability users and professions. These are the types that I have finalized as of now:

Ability Users / Power Bases

Of the Mind:

Cosmic Beings (Bloodline Cultivators)
Spirit Cultivators
Psychics (enhanced mind, can directly manipulate energies of heaven and earth)

Of the Body:

Cosmic Beings (Bloodline Cultivators)
Body Refinery Cultivators
Runic Cultivators (use of inscribed runes on oneself to imbue and control energies, now extinct)

Energy Control:

Cosmic Beings (Bloodline Cultivators)
Spiritual Cultivators
Immortal Cultivators

Non-orthodox:



Augmented Beings
Elementals (genetic modification to provide affinity and control over one or two elements)
Rift beings (invaders from a different realm / universe, later revealed to be sentient creatures from a different multiverse. They have abnormally strong bodies, resistant to spiritual / mental methods, projectiles. Only weakness is the manipulation of energies)

Major Professions:

Alchemist
Formation Master
Mentats (humanoid computers)
Artificer / Blacksmiths
Inscriber (Inscribing runes, now extinct)
Medicine Master
Gunslinger (bounty hunter type)
Warriors, Leaders and Generals
Spiritual Masters (religious type, giving blessings of their tenet)
Healer / Medic (use of energies to regenerate cells)
Technicals (energy and supernatural tech)
Teacher / educator in the ways of technology, spirituality, cultivation and bloodlines
Beast Tamer
Seer / Prophet Type (able to glimpse the turnings of the wheel of fate)
Appraisers / Analysts
Assassin
Instrumentalists

These are some types that I have begun integrating in the overall story arc. Do share your thoughts, and feel free to add other types.

    Well, if it's a cultivation world, then Alchemist, Medicine Master, Healer/Medic, Appraiser/Analyst would be the same major profession, that being Alchemy. Also being a cultivator usually entails being a bounty hunter. Similar thing for Formation Master, Inscriber, etc... it's the same thing, using indirect means to control energy. As for Mentats... it's too op, there is a reason why you don't see such concepts in fiction (without some drawback that makes no sense, for example, them not being able to use any energy -> Qi/...), a Mentat would be able to learn all the other professions (not sure if you can learn prophecy :D) in the time it would take a normal person to learn one.

      i think what you say is all valid, as these are all professions that we can add on top of characters' power bases. so yea.
