Ever since I received my second like and second reply I've always been given the total amount of all likes and all replies I've received in the notification.
Not recieveing correct number of likes and replies in notifications.

You need to tap on the notification to reset it instead of swiping it away.
do as CK suggested, if you don't click the notification, the apple will sum the count auto.
