Non cultivation interesting plot
I'm really a superstar is one of the most awesome novels I have read to the present.
Dungeon Defense is a pretty unique korean novel. MC is as smart as Light from death note but in a more political sense. More of fighting to outsmart the other, plotting, fighting wars against humans, very different, still fantasy. Every character is fleshed out. They have their own unique way of cussing though. Ps. despite its name, there isn't anything about dungeons.
I might be going far off the bounds of what you're thinking but if you don't want cultivation don't look for chinese ones too much.

You should check out Chronicles of Primordial Wars. Although the mc does get stronger I don’t think it’s a cultivation novel. It’s about this dude who got teleported to another world that is still in its Stone Age. He tries his best to survive and gets stronger on the way, but he doesn’t practice cultivation because his strength goes up after he fights.

More like a KINGDOM manga to set your example..it doent have a cultivation genre but its a manga. You might want to develop your own story if you feel bored.
"Village Girl as Family Head: picked up a general for farming" shows great promise. A story about a modern woman waking up as a 16 year old girl in feudal China and trying to provide for her younger siblings/dealing with horrible, older relatives. The plot and characters seem very interesting so far, but the updates are abysmally slow. The novel says it updates once a week, but it is more like once every one or two months.
