I have this book and I want to scrap it and start all over from scrach but I can't figure out how to unpublish the first one. Can someone help me?

You can't unpublish on inkstone, unfortunately.
The best you can do is delete the chapters, but it will forever remain as a blemish on your profile.
lilGoat That's to bad, I guess I could always delete old chapters.

Up to you, if you want to rewrite a book but not lose the followers of the original just repost in the first book. If you want to be completely from scratch start a new book.
